June 2021 Newsletter

Issue 62

It was FANTASTIC to see so many of you in person at our May meeting! It was a beautiful day and location, some gorgeous work was shown, and the snacks were yummy--what more could you ask?

I know we all can't wait until we can do this on a regular basis again.  In the meantime, enjoy our June and July meetings from a comfy chair in your air-conditioned house via Zoom.

Please watch the newsletters and blog carefully for news about the August meeting--both for location AND a possible date change for the meeting!

I'm looking forward to starting our Solar Flare sewalong this month as I know many of you are--a great project for our hot Florida summer! Join us!

THIS SNACK WAS A HIT AT THE MAY MEETING...
                                               HERE'S THE RECIPE !

     Cheese and Pecan Crackers

by Doris Manuel, Debby Manuel’s mother-in-law.
Great slice and bake recipe to keep in freezer for last minute snacks/appetizer.

    Ingredients

1 lb. sharp cheddar cheese – grated (you can use pre-shredded from grocery store)
1 lb. butter minus 1/8 stick
3 ½ cups flour – Wondra is best to make them "crunchy"  (takes all of one “can” and part of another). You can find it in the flour department at Publix, but not much in stock on the shelf
    ¾ tsp. salt
    Dash red pepper (optional)
    1 cup chopped pecans

Waxed paper (I still use this then put in freezer zip lock bags if freezing.)  I’m sure clear wrap will work too but with wax paper you can do the “rolling” on the sheet you wrap it in)

    Process
Mix grated cheese and butter with mixer
    Add salt and pepper
Add ½ flour until stiff in mixer
Add rest of flour with fingers
    Add pecans last

    *Tear off waxed paper

*Take ¼ mixture at a time – roll with hands on waxed paper as a "snake" to about 1 ½ in. wide.

*Roll wax paper around the roll – refrigerate until firm (can freeze) - you should have 4 ropes,1 ½” wide

*When firm (if frozen let soften some before slicing) –

slice about ¼ inch wide and lay on ungreased cookie sheet (Silpat pan liners work well)

*Bake at 375 degrees. Watch very carefully. Some ovens take less time – 12 minutes

*When cooled, remove to a rack for further cooling)
